Chef Al began his culinary career working as a chef in several high profile restaurants and held positions in all stations. He completed a one year apprenticeship at the Queen E. in Montreal, Canada and then worked for three years at Marriott Hotels Chef Gourmet Rooms. Other employers included the Montauk Yacht Club where Chef Al was in charge of off-property catering; the French Shack in Manhattan, NY as a Saucier; and Broadmore Country Club in Largo, FL (home to the PGA Tour Challenge) as a Banquet Chef. He was also part of the opening team for various locations.
