Alessia Cipolla

Alessia Cipolla is the creator and coordinator of La Construction of Taste, the gourmet soul of Studio Archipass, born in Milan in 2009. La Costruzione del Gusto is an open and multidisciplinary network of multidisciplinary professionals. It is aimed at food & beverage companies and operators to support them in the implementation of projects dedicated to hospitality, catering, oil and wine. We design spaces for the production, distribution and tasting of gastronomic products, design objects, events, educational workshops and communication strategies. Biography Alessia Cipolla studied at the ETH in Zurich and graduated in Architecture at the University of Architecture in Venice. In 1998 he obtained the Master's degree for the A.N.A.B. to Venice. In 2003 he founded the design studio Studio Archipass based in Milan which deals with building renovations and office design. In 2009 he created La Costruzioni del Gusto, an open and multidisciplinary network of professionals who develop projects dedicated to the world of taste and the table. She is the creator and teacher of courses in table architecture, a theme on which she has published the book "The project of the table. Building the space of conviviality "published by Francoangeli in 2015. She was part of the jury for the Best Emerging Chef Italy 2010/2014 award, and as an expert in the aesthetics of the dish, for the selection of the Italian chef for the Bocuse D'Or Europa of the 2014, designing the tray and the composition of the dishes for the 2015 European edition. As a designer he was part of the team of chef Paolo Griffa for the Bocuse d'Or Italia 2017 selection. She teaches Food Design in the Master of Food Design of the Milan Polytechnic School of Design and in the Higher Education Master of Horeca Design of the Milan Polytechnic. He then teaches Art de la Table and design of the restaurant within the Masters of Restaurant Management of the international school of Italian cuisine Alma in Colorno and at the IATH in Cernobbio. She is a lecturer at the Mercatorum University and holds his own course in Design and Gastronomics in the Faculty of Economics (Degree Course in Gastronomy, Hospitality and Territories). She has written for magazines in the f&b sector since 2008 on topics such as architecture and wine, food design, wine design, hotel restaurant and wine tourism: among others for www.wellmagazine.it, www.olioofficina.it/oliocentrico, www.lavinium.it and Vitae (official AIS magazine). As an expert in kitchen design, she wrote as an editor for the magazine Progetto Cucina. She collaborated with Officelayout, the office sector magazine, De Vinis and Sala & Cucina. Since the first edition she has been part of the jury of the journalistic prize "Italian Talent Award" at the Chamber of Deputies. She is a partner of Guest Factory, a professional platform dedicated to the world of hospitality.
