Watching him cooking with his special circles of ingredients tecnique is such an amazing show! His favorite paella is the Mixta paella always with double (or triple) alioli topping.

José Viamonte

From Caracas, Venezuela, José is such a people person. He really loves to explain every detail of the paella experience and has a delightful way of taking personal care of every guest. For him, paella events bring his family and chilhood most loved memories as the food is the thing that keeps family and friends reunited. Sharing and evening with him is always memorable!

Native from Valencia, Spain, Chef Saul's culinary passion led him to different corners of the world, from Thailand to Brussels, France, and now Austin TX. While working in the fast paced world of restaurants was challenging, Saul saught to construct an evening of dining that was a bit different. He always wanted to bring the restaurant to the people, and bring his specialty Paellas to be part of an experience. He cooks the larger than life paellas right there infront of you to open the floor to conversation, awe, smells, and a true sharing of an evening.
