Blue Onyx Bistro, an upscale seafood, steak and sushi restaurant just inside the West Loop near the Galleria. The signature dishes will include a 35-day dry-aged rib-eye steak; Parmesan-crusted Chilean sea bass; grouper topped with bacon-wrapped sea scallops in a creamy ginger and key lime sauce; and the Ocean Smokehouse, snapper topped with scallop and shrimp with buerre blanc brought to the table under a dome of cedar smoke... Chang's passion is cooking and creating new dishes using only the freshest ingredients and the cooking techniques he has mastered over the past 30+ years. Chang is also known for his unique and creative plating. "Presentation is as important as taste," Chang likes to say, "because we feast with our eyes first."
