This is a family recipe handed down to me from my mother in law, who inherited it from hers. We are the 5th generation of a Bengali family with deep roots in Uttar Pradesh. When our ancestors joined the British Civil services in the early 19th century, they brought with them their cuisine from the east. Generations of evolution has created a strong bond between Bengali, Mughal and Lucknowi cuisine. Lucknowi cuisine, although similar to Mughlai cuisine, differentiates on the methodology of cooking. Its uniqueness comes from the slow preparation and layering of flavour in dishes. Where Mughal dishes are rich in fats due to excessive use of milk, cream and spices, lucknowi food is more subtle with just handful of spices.
