Carol joined the team over five years ago and has worked her way up the ranks. She now based in ELY Wine Bar, D2, focusing on group bookings and events. If you are hosting a special occasion with us, she will be your LovELY point of contact through the whole process from your initial enquiry to the event and beyond!
An integral part of the team since, literally, year one, Dilly has been part of the ELY team for over 20 years, she's practically family and we'd be lost without her! Part of the original core team at ELY Wine Bar, D2, she has worked her way around all the ELY venues, helping set up each new team. Dilly is our head day chef in Maynooth, in charge of all our delicious deli items, breakfast and lunch while also overseeing the important kitchen management and compliance requirements.

Erik Robson tries to come up with a different answer, he's not always interested in thinking and doing the same thing that everyone does. One key element in Erik's outlook has always been WINE FIRST. WINE FIRST when it comes to creating an ELY experience. This quality has seen ELY excel and grow, year after year. Erik, along with wife Michelle, has done a truly significant thing for Dublin, getting folks to drink the world's most interesting wines.
Greg is currently our head chef at ELY Wine Store, Maynooth but you may recognise him from other ELY venues too. Since his arrival at ELY he has been integral in menu design across all of ELY. His professionalism, precision, speed and consistency together with his infectious optimism makes him an absolute pleasure to work with! Greg shares his knowledge easily, training and teaching at all levels, he also heads up our development kitchen, working on new ideas for future developments.
Award winning sommelier and avid Champagne lover, Ian Brosnan, manages ELY's wine bar lists, wine store requirements and cellaring needs. He is the conduit with the many specialist importers that we deal with, selecting some of the most interesting and representative wines from the best and least recognised regions around the world. Ian also works with the various key Italian, Spanish and French wineries that ELY imports directly from. Many of our private clients lean on Ian to advise on and source their wines to enjoy at home, be it for everyday enjoyment, special occasions, cellaring or all of the above. To top it all off he happily shares his years of experience and knowledge with ELY customers through a variety of wine experience packages, he educates about wine and wine production, about food and wine matching, while all the time keeping it fun, fresh and interesting.
Another member of the Robson clan, Kate joined the team in 2015 and has worked in various positions across ELY. She now works as our Marketing and E-Commerce manager. She shares all our news and focuses on growing our online wine store so people can enjoy the lovELY experience nationwide! Kate brings a fresh outlook to how best we share what we do. She helps ensure that booking a seat in any ELY is as easy as possible, while sharing insight on our menus and wines lists. Kate also ensures that you can enjoy your lovELY experience at home, overseeing the various elements of making sure your online ELY shopping reaches you on-time-every-time.
Our talented head chef, Luca, has been with ELY for a few years now and has been instrumental in pioneering the new seasonal ‘small plates' style menu at ELY Wine Bar. He brings a fresh view to how best to make great ingredients shine, creating a depth of flavours with the lightest of touches. Luca's Italian heritage definitely shows through and he understands the balance between the food he creates and the wines that we pour. Luca works hand in hand with our director of wine, Ian, to ensure each dish is carefully curated to help ensure the ELY Wine Bar experience is among the best wine bar experiences in the world.
Michelle, along with husband Erik, has established some of Ireland's best wine bars and restaurants. A dedicated business woman, Michelle's ethos is to deliver a consistent and quality product daily, which she does tremendously, while continuing to grow and expand the hugely successful ELY brand. Michelle is very much about the team and the fact that without a team ELY there is no ELY. Equally important is, of course, our customers and Michelle's focus on how ELY welcomes and looks after each customer is a key element of the customer centric ethos at ELY.
Rachel is a woman of many talents, juggling included, as she manages all facets of ELY Wine Store in Maynooth. From the deli, to the wine shop to the restaurant to making sure your online order gets to you she ensures all runs smoothly, and always, has a smile!
Since moving from Australia and joining the ELY team in 2018, Troon has been an integral part of ELY. At an operations level he keeps the many facets of ELY going smoothly and takes a holistic approach in his management style. While Troon excels at pulling it all together he is, like the rest of us, happiest when talking about wine. He brings fresh insight to our selection of wines, especially those from ‘back home', while also keeping up with the latest trends and developments in wine bars and wines shops from down under.
