In order to provide you with the freshest possible olive oil and to maintain high polyphenol levels, we harvest our olives early and correctly, we grow them without wasting time, we pass them through paper filters by cold pressing, we cut them off from oxygen and keep them in our tanks, and we present them to your liking in our dark glass bottles.
