For the past 9 years, Miguel has worked professionally in gastronomy. However, having been born and raised in Hidalgo, he learned early on about flavors and cooking from his mother and grandmother. Miguel credits Emanuele Olivero with teaching him the art of preparing Italian dishes. Not only did Miguel learn to love preparing Italian dishes, he learned the harmony between food and drink. Jennifer knew Miguel was a perfect fit because of his love and knowledge of wine and International cuisine. Not only that, she wanted the Pedregal Pour House to be filled with big smiles and Miguel fit perfectly for that too!
