Roy's Caribbean Restaurant was established in January of 1990 in Albany, New York by Roy Vincent and his wife Josette Vincent. Roy was born in Western Land Jamaica, a small province near Kingston. Josette, who goes by Rose, was born Saint Elizabeth, Jamaica... Our approach to Caribbean cuisine is to be authenticate and true to our Jamaican roots while bringing you traditional American comfort food favorites. Jamaican cuisine is a combination of traditional west African food like ackee, saltfish, mackerel and plantains integrated with English, Indian, and Chinese influences like the use of roasted meats, curry seasoning, and cabbage as a primary vegetable.
