Ollie is an energetic and friendly guy who loves working with people, guests and team alike. When he's not working, he'll likely be on a walk somewhere with his dog Tando. Ollie has a taste for gin, and with over 50 on our back bar, he's got a lot to try and after a brief stint in a Whisky hotel in the highlands, he's got a couple of things to say about the 30+ whiskies too! With plenty of experience in pub management, as well as a healthy interest in cask ales, Ollie has certainly found a good home here at the Architect and we're lucky to have him on board... Our passion lies in finding quality fresh ingredients and preparing, cooking and presenting them in a modern but unpretentious way.
