I have a secret - until summer of 2020 I hated mushrooms. Like, bottom 3 foods. I had only ever tried white button mushrooms or portabellas (both Agaricus bisporus) and I couldn't stand the rubbery texture. My partner, Boyan, had grown up revering mushrooms as both delicious food and medicine and started growing them because he couldn't afford to keep buying pounds per week. Once I had to be supportive and try his fresh shiitakes I discovered to my surprise that mushrooms could beā€¦delicious. When my most recent job ended in the middle of the pandemic, I decided to take the plunge and, with Boyan as a business partner, begin growing mushrooms full time.
