With over 35 years experience in the hospitality industry, Mark is originally from a small town outside Louisville, KY. He attended the University of Louisville, where he was president of Delta Upsilon fraternity for 2 years. Mark served in the US Army as well as the Kentucky National Guard. He started in the hospitality industry working for the corporate offices of Apple South in Madison GA, as a restaurant opening coordinator, opening 49 Applebee's across the United States. Mark transplanted to East Tennessee in 1997 to be the Kitchen Manager of Alabama Grill in Pigeon Forge for 2 years. Then going to work for Diverse Concepts, "Texas Roadhouse" for 5 years, leaving as the regional training manager. Mark is now working as an account representative for a local liquor wholesaler.
Mark enjoys spending spare time with his husband of 19 years, friends, family, traveling and outdoor activities.
With 28 years experience in the hospitality industry, Mia's passion has always been training. Her experience allows her the ability to show how to make amazing money while on compliance with he law.
Tiffany is a native Tennessean with a passion ans love for the Sevierville and East Tennessee area. She brings over 15 years restaurant management experience to TopShlef Express.
When she's not teaching classes. Tiffany enjoys spending time with her husband and two daughters. As much as possible, she gets outside to enjoy the Smokies and all of the outdoor beauty that the area provides.
