David Rex

Research Interests: David Rex is a Specialist Dietitian for Highland Council, working in "Health & Social Care - Children's Services". He has a lead public health role for Food & Health in schools, nurseries and Children's Residential Units; and for over 20 years, has been providing specialist Dietetic advice for children with Autistic Spectrum Disorder (ASD) and Attention Deficit Hyperactivity Disorder (ADHD) as well as other conditions affecting mental as well as physical health, wellbeing and performance. Clinically, he advises on diet and nutrition in relation to children's mood, behaviour and learning; and on how to deal with the selective eating patterns that are so common in children with ASD and related conditions. He acts as a specialist advisor to the BDA, and also plays a lead role in health education: he has been heavily involved in the development of the "High 5" Health & Wellbeing programme for Highland primary schools, and is a member of the Highland School Meals Stakeholder group. David has a first degree in Chemistry and Food Science, a post graduate Diploma in Nutrition and Dietetics, and a Masters in Food Policy. He has over 30 years experience of the food system, starting as a "Teenage burger flipper" for a well known fast food chain, and going on to look at food and health from a range of different perspectives, in posts as diverse as: food chemist and technical advisor in the food industry; community and hospital dietitian; and food policy advisor for a Health Authority. He is an advocate for sustainable and socially just food systems, and is passionate about cooking and eating well.

Co-author of the ground-breaking The Eskimo Diet - which pioneered the modern importance of the omega-3 story - he recently revisited this area of special expertise to write The Brain Food Diet, which broke new ground in outlining the importance of the omega-3 to omega-6 balance in normal brain function and disease. Others of his books include Tuberculosis: The Greatest Story Never Told, which was welcomed with considerable acclaim globally, and Virus X, which changed the way we view viral evolution. World in Action and Horizon based programs on Frank's books and his tuberculosis book, renamed The Forgotten Plague, was a non-fiction book of the year for the New York Times. Virus X also received outstanding reviews in the New York Times and The Washington Post's Bookworld, and his Darwin's Blind Spot created interest in academic and lay circles, leading to Frank being elected a Fellow of the Linnean Society of London. In the UK, this book was chosen as Book of the Month for May 2004 on www.readysteadybook.com and in the US it was the book of choice for Charlie Munger in 2003. His new book for 2009 is Virolution. Frank's books have been the subject of many TV and radio documentaries and have been translated into many languages. He is also an occasional reviewer of books for the New York Times. Dr Frank Ryan is a consultant physician in the UK as well as being an innovative evolutionary biologist, who has introduced the concepts of aggressive symbiosis and genomic creativity to the story of human evolution. He has pioneered the concept of viruses as symbionts, thus bringing together the disciplines of evolutionary virology and symbiology. His appointment as Honorary Research Fellow in the Department of Animal and Plant Sciences at Sheffield University is aimed at introducing modern evolutionary concepts of human evolution to medicine.

Dr Paul Clayton

Research Interests: Dr Paul Clayton graduated summa cum laude in Medical Pharmacology from Edinburgh University, prior to obtaining his PhD. He is a Fellow of The Royal Society of Medicine and a former Senior Scientific Advisor to the UK government's Committee on the Safety of Medicines. Other posts he has held include a Visiting Fellowship at Oxford Brookes University, Scientific Directorship of the Szent Gyorgi Institute of Clinical Pharmaconutrition in Budapest - and has contributed as a speaker to several of FAB's UK events. Dr Clayton's book 'Health Defence' provides a highly accessible explanation of what good nutrition really means - along with evidence-based dietary guidance for improving both physical and mental health and performance. His subsequent book 'Pharmageddon' was one of the first 'textbooks' in the emerging science of pharmaco-nutrition. It takes the small step from nutritional biochemistry to the pharmacological and therapeutic application of nutritional programmes, and does so in an accessible and intensively referenced format.

Jack Winkler

Research Interests: Professor Jack Winkler is a former Professor of Nutrition Policy at London Metropolitan University, and is currently a Director of Food & Health Research, an independent consultancy on nutrition that works primarily with public interest organisations. In this role, he acts as a specialist researcher, policy analyst, writer, lecturer and consumer advocate on food, nutrition, and health. Jack is also a founder, officer and/or member of most UK voluntary groups concerned with diet and health, including London Food Commission, National Food Alliance, Coronary Prevention Group, Consensus Action on Salt and Health, Joint Health Claims Initiative, Baby Drinks Campaign, Action and Information on Sugars, and Sustain, as well as being a member of the Scientific Advisory Board of FAB Research.
