Our staff from back of house (the chefs that handle your food) to front of house (the staff who serve your food) are educated on Coeliac Disease and the importance of knowledge all the way though to risk examination and prevention, we do not cross contaminate in our kitchen, and our philosophy is simple. All dishes that are free from Gluten is prepared and served with ‘turquoise' utilities and all dishes that contain gluten are cooked with our ‘red' utilities. This colour coding is used from the preparation process all the way through to the serving process, communicating to all diners, and all staff no matter how long they have been a part of our family for.
