Bianca is justly and proudly Puerto Rican but has lived in the UK for 13 years. She did her degree in hospitality and has worked on our sector ever since. She is known for her calm, engaging, enthusiastic and professional approach. Nothing flaps Bianca and that's because when not working at The Unruly Pig, she has more than her hands full raising two children, with the dedicated help of her husband. Passionate and knowledgable abut food, in those rare moments she has to herself, her main interests are gardening and, of course, cooking.
Corin Troung's family were also "Vietnamese Boat People" escaping after the Vietnam war in the late 1970's. He has been in hospitality effectively all his life as his parents and grandparents own and run the best Chinese/ Viet restaurant in Ipswich. Corin is our quiet and calm force in the kitchen and has worked his way up from Chef de Partie to Senior Sous Chef. A keen skier, he is a raving Arsenal fan and loves everything about Star Wars (and even dresses in costume to go to Star War film premieres …….really?)
We had three attempts at recruiting Jackie in the past but eventually we got there when we appointed him General Manager in 2023. Jackie already had a successful history of working with Chef Patron Dave in his previous career (and indeed they both attended the same school). Jackie is known for his calm and professional approach, his motivational skills and for being a great team member to work with. His father came to the UK as part of the "Vietnamese Boat People " diaspora: Jackie's work ethic is therefore legendary. A keen foodie (who is also very knowledgeable about wine), his main interests (obsessions ?) are Ipswich Town Football Club and Trixie (his long haired dachshund !)
Jason is our Bar Manager and is the type of chap who makes you feel better about life. He is probably the most popular member of our team. Jason is known for his kindness, consideration, cheerfulness and positivity. He is , of course, a dab hand at our Unruly cocktails but his real passion is wine. To hear Jason wax lyrical about wine is a thing of wonder. He is king of our wine flights. Jason is animal crazy and has a veritable menagerie of animals at home. Other than his animals, Jason's other main interest is cars - indeed he is car mad and very proud of his Audi TT .
After spells working on cruise ships (and then as a mixologist in New York), Luke joined Team Unruly in late 2023 and has fitted in like a glove ever since. Hard working, knowledgeable, kind and engaging, our Luke is wise beyond his years and a real asset to The Unruly Pig. In his spare time, Luke is a very keen golfer as well as Spurs supporter.
Olly started at The Unruly Pig as a bar man but his huge talents are such that he quickly and easily worked his way up to join our managerial team. Olly is a dab hand at mixology and many of the Unruly cocktails are his creation. Olly's passions are wine, BMW's, motorbikes and playing the FX (foreign exchange) markets. Olly is such a fashionista that he is also known as The Pig's best dressed man!
