SPRYWOOD CROSS

Sprywood Cross is an award-winning vintage bottle-fermented sparkling dry cider created by the Homan family. It is made from traditional apple varieties grown in the family orchards at Wooda Farm in the Torridge Valley, Devon. It was awarded Gold in its class at the 2017 British Cider Championships... Following a cider-making course at Pershore College, we started to experiment with various types of cider. Struck by the similarity of the taste of dry cider to several wine writers' descriptions of the base wine of Champagne, we decided to concentrate on making a sparkling cider. We use the labour intensive ‘methode champenoise‘, producing lots of natural fizz and complexity of flavour by maturing the cider on the yeast from the second in-bottle fermentation over a number of years before disgorging.
