Instead of adhering to traditional Italian dishes, he found it much more interesting to innovate his native cuisine using outside influences... A visit to Spain sparked this desire. After traveling around the world, he moved to Ibiza, where he worked at a restaurant family business Trattoria Del Sole. The multitude of ethnicities in the city - and their flavourful cuisines - all served to inspire him to pursue a culinary career...
