On June 1st, 1987, Walter and Irma Räss-Koller acquired the Tufertschwil cheese dairy from the artist Walter Dick. On that day, Walter Räss Junior began working as operations manager at the Tufertschwil cheese factory. Appenzeller cheese has been produced in Tufertschwil since 1896, initially as ¼-fat Räss... On January 1st, 1992, Walter and Annelies Räss-Huser took over the cheese dairy from their parents.
