At the Wilbur Family Sugar House, we boil sap the old fashioned way using a wood-fired evaporator. Currently we incorporate a 2 1/2' x 8' evaporator in our processor. We are planning to expand in the near future by switching to a larger 3' x 12' or 4' x 10' evaporator to reduce our boiling time. In recent years we have increased our yield by utilizing cutting edge vacuum tech, rather than putting more taps into existing trees.
