There are too numerous specialities to list in this intro but don't leave without trying the Costillas de cerdo en salsa (spare ribs bathed in a rich Spanish sauce) and Gambas pil pil (Spicy king prawns sautéed in olive oil, garlic and Spanish guindillo peppers). There are plenty of vegetarian options too, including Berenjenas gratinadas (fresh aubergine topped with cheese, tomato and herbs) and Pisto manchego (Spanish sauté of fresh vegetables with tomato, garlic and herbs).
