In contrast, we have developed a novel method whereby our abalone are shucked, dried over 6-8 weeks, and left for a further 6 months to develop the flavours. The abalone are then rehydrated from dry abalone, cooked in a large vat, then bagged and sterilised. A restaurant chef or home cook needs only to place the sealed bag into hot water for a few minutes to reheat the abalone before serving. We believe that we are the only company worldwide that has been able to successfully achieve such a process leading to a high-quality product with a three-year room-temperature shelf life...
