After years of trial and error emulating the flavours and tastes of smoked meats savoured on his many business trips to the US, Scott believed he had developed his unique Dark Dry Rub and Sauces to a stage where they would readily appeal to the discerning Australian palate. He then designed a commercial size smoker which would give him not only the capacity but the infinite temperature and smoke control required to ensure the continuity of flavours and tenderness for his beef, pork and chicken.
