COPPER CABOOSE

In 1977, Copper Caboose opened its doors in Lubbock, Texas, at the corner of 4th Street and Boston Avenue. Founded by John and Frank Fitzpatrick and Frank Smith, it was the first restaurant in Lubbock to serve fajitas. Over the years, Copper Caboose has added many more authentic Mexican and traditional American dishes. Our amazing array of menu items for the entire family was developed in large part by the creative influence of Lupe Gonzales.
