Anthony Fardet

Trained as an agro-food engineer from AgroParisTech, he is now a researcher at INRAE in preventive, sustainable and holistic diets. He has been working in research at the food-health interface. His current focus is on the impact of transformation on the health potential and the "matrix" effect of foods in sustainable food systems, in particular the characterization of ultra-processed foods and food scoring.

Elizabeth Robinson
