Our restaurant is supported in this process by several entities including Bruxelles Environnement, Village finance, and Hub.brussels... At NORMA, we mill our flour fresh daily for the preparation of focaccia dough to keep the delicate flavor of the grains intact and to guarantee the lightness and better digestibility of the dough... To reduce our environmental impact, we provide water from a filtered water fountain and serve it in glass bottles to reduce CO2 footprint.
