Dating back to the 8th century to the region of Abruzzo in Southern Italy pizzelle are the first recorded cookie in history. To this day, pizzelle remain greatly unchanged in the method of baking. My goal is to maintain the nostalgic taste and texture of Nona's pizzelle while making them accessible to those with allergies and intolerances.
