Wine House Gurjaani is a family-operated company specializing in producing authentic Georgian wine made with minimal interference or the use of additives. Since 1864, wine-making has always been an inseparable part of the Aliashvili family. For 37 years, my grandfather worked in a wine factory where a great number of industrial wines were bottled. However, to pay homage to the roots and traditional wine-making methods, he always made wine according to an ancient Georgian, the Kvevri method, meaning the wine is stored in large, egg-shaped earthenware vessels buried below ground level. Kakhetian wine-making process is different from its European counterpart. It sets apart from the competition due to involving pressing the grapes in a foot-stumping wine press (Satsnakheli in Georgian) and then pouring the juice, grape skins, stalks, and pips (collectively known as Chacha) into clean Kvevri, which is sealed and buried in the ground so that the wine can ferment for five to six months before..
