VECINA VEGETARIANA

My experience with Colombian cuisine started a couple of years ago. I met my boyfriend, a Colombian, and started traveling to Colombia. In love with the country (and my boyfriend), I decided to move to the capital Bogotá. Although I love to cook and learn all about new cuisines, I quickly found out that it is not easy finding tasty, vegetarian Colombian dishes. To me, this seemed a missed chance. So many components of plates are naturally vegetarian and delicious, and so many dishes can be made vegetarian. Colombian food is too good to only be eaten by carnivores. So there it started. My mission, my interest: making Colombian food - with local ingredients - but vegetarian friendly. Vecina Vegetariana is a resource for everybody who is interested in cooking Colombian dishes.
