The ends of the wood. Can be identified by curved lines in rows. To make an end grain cutting board, the board must be cut width-wise and flipped so the end of the board turns into the top/bottom. End grain cutting boards commonly have a checkerboard appearance. A well-constructed end-grain board creates the effect of circles when glued together (this prevents the end-grain from fighting against itself when receiving moisture)...
