Located in Walling, Tennessee, Underground Processing is at the forefront of USDA-inspected meat and poultry processing. As the exclusive USDA-inspected poultry processor for small farmers in Tennessee, we're dedicated to providing top-notch processing services while fostering the growth of local agriculture... Our facility, initially built as NIKO & COMPANY, is the first and only Small Farm Poultry Processing Facility in Tennessee under USDA inspection. After acquiring and transforming the closed NIKO & COMPANY, Larry Masters established Underground Processing. Our doors opened to the public in June 2018, following the receipt of a USDA inspection grant.
